I'm really needing spring right now. It's certainly out of the ordinary for me but I'm desperate for the growing season. Strangely I'm also dying for the longer days, the lighter fare. Very out of the ordinary.
The following is the best ode to springtime that I think I can make.
Miso Corn Soup
8 C Veggie Broth
3 C Corn, mashed up
1/2 C White Miso
1/2 C White Wine
1 C Green Onion, chopped
2 t Cumin
1 t Orange Zest
1/4 C Soy Sauce
1/2 C Parsley, chopped
1 block Tofu, diced
Heat broth to a simmer. Add all remaining ingredients with the exception of the parsley. Heat thoroughly for 15 or 20 minutes, allowing the flavors to marry well. Add parsley, heat on low for an extra 5 minutes. You're all done.
